Scrambled Eggs with Smoked Salmon

Simple and delicious. What better way to start your day.

Scrambled Eggs with Smoked Salmon

Serves 4

Ingredients
  • 4 slices of wholemeal bread.
  • 50g/2oz butter.
  • 150g/5oz smoked salmon.
  • 5 large eggs.
  • 5 tbsp crème fraiche.
  • Ground black pepper.
  • Fresh Parsley to garnish.

  1. Place the bread under a grill and lightly toast on both sides. Remove from the grill and butter each slice to taste.
  2. Place equal amounts of smoked salmon onto each slice of toast and set aside.
  3. Crack the eggs into a bowl, add the black pepper and beat lightly. Heat the remainder of the butter in a saucepan and add the egg mixture. Stir constantly, over the low heat, until the mixture begins to thicken.
  4. When the eggs are just cooked, remove from the heat and gently stir in the crème fraiche.
  5. Spoon the scrambled eggs onto the smoked salmon and garnish with the parsley.
