Scrambled Eggs with Smoked Salmon
Simple and delicious. What better way to start your day.

- 4 slices of wholemeal bread.
- 50g/2oz butter.
- 150g/5oz smoked salmon.
- 5 large eggs.
- 5 tbsp crème fraiche.
- Ground black pepper.
- Fresh Parsley to garnish.
- Place the bread under a grill and lightly toast on both sides. Remove from the grill and butter each slice to taste.
- Place equal amounts of smoked salmon onto each slice of toast and set aside.
- Crack the eggs into a bowl, add the black pepper and beat lightly. Heat the remainder of the butter in a saucepan and add the egg mixture. Stir constantly, over the low heat, until the mixture begins to thicken.
- When the eggs are just cooked, remove from the heat and gently stir in the crème fraiche.
- Spoon the scrambled eggs onto the smoked salmon and garnish with the parsley.
