BBQ hints & tips
Here are some very handy hints on how to prepare best our products for your barbeque this summer...

Fresh salmon
This is RSPCA Freedom Foods Scottish Salmon. To cook brush both sides with a little olive oil, season well with salt and pepper and place on the BBQ for approximately one and a half minutes each side. Ideal with a salad.
Fresh Tuna
Brush both sides with Olive Oil and season well with salt and pepper. Cook on the BBQ for approximately 4 minutes on each side. You will notice the edge of the fish gradually changing colour as it cooks. Once the edge of the Tuna has changed colour remove it from the BBQ drizzle with Lime or Lemon juice and serve. Ideal with pasta or a green leaf salad.
Hot Smoked Gressingham Duck Breast
Although this is already cooked it is ideal warmed through for a couple of minutes on the BBQ. Place skin side down over the hottest part of the BBQ until the skin turns very crisp. Remove from the heat and slice thinly. Serve with past, salad or over roasted vegetables.
Smoked Pork and Stilton Sausage
Although already cooked this fantastic sausage really cooks well on a BBQ. Slice diagonally into 10cm pieces and place on the BBQ for only one minute on each side,warming through melts the Stilton and crisps the edges of the Sausage to give you a fantastic flavour. This is ideal for mixing with an Italian style tomato sauce before adding to Penne Pasta.
Fresh Cumberland Sausage
This is the ultimate BBQ sausage. Gluten free, no rusk and 98% Pork. We buy our pigs from the farm directly behind the Smokehouse. They are free range Saddlebacks left to run around the woods and fields for nearly twice as long as the commercially reared pigs.
Venison Strip Loin
This is the most fantastic product you can buy. Wild Red or Roe Deer selected and shot on the estates of Cumbria, high in protein and virtually fat free. If you like fillet steak you will love Venison loin. Season with salt and pepper and cook on the BBQ to your own preference. Try it slightly pink in the centre.
Venison Sausage
A wonderful meaty sausage, made using similar spices to that of the Cumberland. This is an ideal hot dog sausage, fantastic with onions and relish.
Venison Burgers
This is a low fat version of our traditional beefburger, ideal for the kids.
Lakeland Beef Rump Steak / Sirloin steak / Fillet steak
We source our Beef from Lakeland farms all within a twenty mile radius of our premises, we specify the breed and the age of the animal we require and then we hang them for a minimum of three weeks. Our steaks are full of flavour and are ideally served rare with chipped potatoes or salad. Why not try rubbing the meat with a clove of garlic and season well with salt and pepper before cooking.
