Baked Whole Sea Bream

Serves 4

Ingredients
  • 4 x Whole Sea Bream aprox 500g each
  • 4 x Limes
  • 8 x Tablespoon Light Soya Sauce
  • 4 x Honey
  • 4 x Fresh Small red chilli peppers
  • Salt
  • Pepper


  1. To make the marinade take the juice of four limes and blend in the honey, soya sauce and finely chopped red chilli peppers until well mixed.
  2. Take the sea bream and wash and pat dry with a paper towel.
  3. Score both sides of each fish approx 5 times along each side making fairly deep cuts.
  4. Take four pieces of tin foil each enough to completely wrap and seal each fish.
  5. Place each fish on the foil and drizzle over it some of the marinade and rub into the cuts, turn the fish over and repeat, then pour over a little more and then wrap up the fish in the foil to make a sealed parcel. Pre heat the oven to 200ºC then place the fish parcels in the oven on metal trays for 10 Minutes.
  6. Remove from the oven open the parcels and check they are cooked through. Remove from the parcel with a large fish slice carefully keeping the fish in one piece and place on a warmed plate. Pour over the remaining reduction from the parcel and serve with a fresh leaf salad garnish and drizzle some basil olive oil dressing over the salad and serve.
